Do not use nasty wine even as cooking wine.

It is still gross after it is cooked.

Agreed. A three dollar bottle of wine can ruin a recipie. If you wouldn't drink it, don't try to eat it. And never use merlot for a sauce that calls for generic red wine. It will turn your food purple.
